What did we do before blogging? Seriously, I think I am addicted! Both to keeping up my own blog and reading other blogs, especially those that are updated frequently. I'm not surprised though; I've always loved to write and "keep track" of shit from the time I was little.
Anyway, in a quest to cook more often like I used to, before I started growing this amazing baby, I have been looking for food/cooking blogs. Yes, I know I can practically Google for any recipe and there are all the usual sites, but I really love the "personal" recommendation, pictures, and recipes from fellow bloggers. I decided today that we've been spending way too much money on crappy prepackaged food and eating out (esp for lunches). It's expensive because it's processed food and I usually buy a decent quality of it so at least it's not totally horrible for us, but that makes it even more expensive. But it's so not worth it. The little portions (we like leftovers!) aren't worth it and I am getting so sick of it being 6:00 every night and wondering what my husband can quickly pick up for dinner. NO MORE!
It's not that I can't get up to cook, especially now that I am working much, much less, but we've just been really bad at planning. You know, finding recipes, making a schedule of sorts, shopping for ingredients to make things from scratch, etc. I feel so much more healthy and happy when we do these things...AND it's cheaper! Score.
So this is my new favorite blogger. Annie's Eats. I've already copied a bunch of recipes to sort through and make a grocery list from. I can't wait to try some out! Her pictures are beautiful (I LOVE recipes w/ pictures) and I love that she explains each recipe. Too cute!
Since we can't go grocery shopping until late tomorrow, or possibly even Saturday (we are moving my horse to a new barn tomorrow which could be quite the ordeal) I still wanted to put something together for dinner tonight. 1 jar of Whole Foods organic pasta sauce + mozzarella cheese + 4 mostly eaten bags of whole wheat pasta in random shapes = easy pasta bake! My husband stopped for salad ingredients (veggies? What are those? I think my belly remembers such things!) and garlic bread.
For our salad I made this dressing (which, by the way, we'll have for years - it makes a ton!) from Rumble in the Kitchen. It is incredibly good and simple!
Super Secret Salad Dressing
1 cup good Extra Virgin Olive Oil
1 cup good soy sauce (Braggs Amino Acids, Tamari...any of these will work)
1 cup good balsamic vinegar
1 tsp minced garlic
1 tbsp maple syrup
Mix together and enjoy. Store in fridge.

Why are you moving the horse to a new barn? Has something happened? I thought you and she were loving the new place?
ReplyDeleteI found a barn about 5 minutes from our house (vs almost 30) which will be so nice to have her close by. If she were doing really well at the current barn I'd feel better about leaving her there and not being able to go often, but she's lost a lot of weight and we can't seem to get it fully fixed. Here I can keep a better eye on her, it's a smaller barn, etc. :)
